One of the things people dread the most about the Thanksgiving meal is how long it takes to cook the turkey. Did you know there's a way to do it in about half the time? 

In this video, Sam Sifton of the New York Times demonstrates how to spatchcock a turkey. Yeah I said spatchcock. It decreases the cooking time by increasing the surface area of the turkey.

 

 

It's a little more work and you won't get the same full bird presentation for the table, but who does that anyway? Every Thanksgiving dinner I've had the turkey was carved in the kitchen and served on a plate. Besides, this sure beats getting up like an early bird to start cooking the...uh...bird.
