Roasty’s opened recently, and it is the place to go in Portland for a roast beef sandwich that will make your eyes bug out!

According to the Portland Press Herald, Roasty's took over the spot on Congress Street in Portland where Ada's Kitchen was. In a twist of fate, the owner of Roasty's, Jenn Rockwell, also owned Ada's before it closed at the end of 2021. Now, she specializes in roast beef sandwiches that make you want one immediately.

I'm so glad I'm not a vegetarian

They opened in November of this year and I couldn't be happier. I'm not alone. Jenn told the Portland Press Herald,

We’re so excited to be back in the Portland food scene. We’ve been warmly welcomed back and it feels great.

Roasty's makes its own roast beef in-house and uses a cooking method called sous vide, which gives it the perfect rareness needed for a good roast beef sandwich. What exactly is sous vide (pronounced sue-veed)? The definition from Anova Culinary,

Sous vide is a cooking technique used by the world’s best chefs. Foods are vacuum sealed in a bag and cooked in a precisely controlled, low-temperature water bath over a long time. Your new favorite roast beef sandwich place in Portland, Maine is open late

They have six different styles of roast beef sandwiches (you can substitute turkey) and six different seasonings for their shoestring french fries. But the best part is that they are open late.  They are open Wednesday through Sunday from 11 a.m. to midnight. That's unusual for places in Portland, but she's committed and told the Press Herald,

We’re very much committed to being open late. There are not a lot of options late at night, and it’s a great place to come after work for industry folks and anyone out at the neighboring bars or show venues. It’s like perfect comfort food.
