Lemon Cake for a Zesty Treat
They say that citrus fruits are full of antioxidants and good for the heart. But, what if you add 2 sticks of butter, 4 eggs, 2 cups of sugar and buttermilk?
Well, you may have lost all those health benefits with those added ingredients, but I know it tastes good. In fact, it’s absolutely delicious! I’m referring to lemon cake. It has been one of my mother’s specialties. When I was looking to make something different for an event, I thought back to that mouth watering lemon cake. Mom always used the Barefoot Contessa’s recipe. It’s right online here: Lemon Cake Recipe. It was an absolute hit! I did find that I didn’t need the 6-8 lemons suggested in the recipe. I only needed 3. Maybe, I had especially zesty lemons. I also cut the glaze recipe in half. I didn’t need it to be quite so sweet. You end up with two cakes. Mom usually freezes one to bring out later. I ended up freezing one also and it still tastes just as good…but it doesn’t usually stay long in the freezer.
