I'll be honest with you, I don't think I've ever driven past a food truck and thought, "You know what I need right now? A bison burger." 

But now? I am extremely curious because of this new food truck called Maine-ly Bison is getting ready to open in Auburn, and they're bringing something a little different to Maine's food scene.

Their grand opening is set for this Friday, June 5th, and yes, bison burgers are the superstar of this meat show. 

Now before you picture some wild frontier food experiment, people who love bison will tell you it's actually leaner than beef, packed with flavor, and surprisingly delicious.

This is one of those things that sounds unusual until someone hands you one and suddenly you're wondering why it isn't everywhere. 

Honestly, that's part of what caught my attention.

We have plenty of places to grab a traditional burger, but a food truck dedicated to bison? That's not something you see every day. 

The photos shared by Maine-ly Bison have already started getting people talking, and the burgers look pretty incredible.

Guys, these are big, juicy, loaded with toppings, and exactly the kind of thing that makes you immediately start planning lunch.

I always love seeing new food concepts pop up around Maine, especially when someone takes a chance on something different. Whether you're already a bison fan or you're just the type of person who likes trying new things, this might be worth checking out.
