These Lisbon, Maine moms are working together to create a place to have some amazing breakfast and lunch goodies.

The Sun Journal talked to Desaray Hayes and Jess Hoyt about their journey that ended with opening up a breakfast and lunch spot in the closed China Inn at 222 Lisbon Street in Lisbon.

How did these two moms in Lisbon, Maine meet?

Desaray and Jess have known each other since before COVID-19. Jess was working at Chummy's in Lisbon Falls and Desaray started working there. They bonded over the fact that between them they had 13 children. Jess has 7 and Desaray has 5 and a foster child. Unfortunately, Chummy's didn't survive the pandemic, but the friendship between Desaray and Jess did.

Desaray told the Sun Journal,

I always wanted to have a diner.

Two Mom's Diner in Lisbon, Maine will have all the favorites

Desaray ran Auntie D's food truck, and after selling that to help open Two Mom's Diner, some of that yummy menu will make its way to Two Mom's Diner. Desarary told the Sun Journal about the most popular items,

We had a steak and cheese that everybody loved and my stuffed waffles — those are really, really popular.

What the heck is a stuffed waffle at Two Mom's Diner in Lisbon, Maine?

It's self-explanatory...the real question is - what's it stuffed with? You could try strawberry cheesecake, pumpkin pie, apple pie, or strawberry rhubarb. They may also have biscuits and gravy and very popular Babe’s Burrito. Don't worry, there will not only be healthy alternatives but plenty of gluten-free choices since Jess has been living with celiac disease for 20 years. And according to the Sun Journal, Mary Graziano of Grazi to Go is baking the gluten-free goodies. I love her!

Lisbon has been wanting a diner for a long time and these two moms seem like the perfect solution. Keep an eye out for them to open soon!
