Of all of the things that I love about my fiancée Kathleen, the fact that she is an excellent cook has to be near the top. She's never made a bad meal for me. And that says a lot, considering I'm generally a pretty picky eater. Not only are her dishes delicious, but they're also quite healthy! She's been kind enough to share how she makes a few of my favorites...here's one of them:

SALSA CHICKEN

Start with three chicken breasts. The great thing about this recipe is that they can even be frozen! Throw those breasts into your crock pot (you can use an Instant Pot too), along with a pinch of salt, a couple pinches of pepper, and about a jar of salsa, or just enough to cover the chicken. We usually use medium salsa, but if you're feeling adventurous, you can go for the hot stuff. Or, maybe switch it up with some mango or pineapple salsa. Yum!

Cook it in your crock pot for 6 to 8 hours on low, or 4 to 5 hours on high. When the time is up, shred up the chicken, mix it up with the salsa, and let it sit for a bit. Serve it up with any of your favorite sides...rice, pasta, veggies. It makes for an easy, delicious, and nutritious meal!
