If you've listened in to the show you've probably heard me chatting about new dietary restrictions and attempts at being healthy.

Over this past year there has been much in the way of change and transition for me, so when my stomach started expressing it's anger in what I would consider a 'violent' manner, I decided something had to be done.

So I did what any self respecting american does when a question poses itself. I googled it!

After hours of research I decided to try an anti-inflammatory diet to see what would happen; eliminating grains, dairy, sugars, legumes, caffeine and alcohol ... :-(

I realized quickly that unless I came into some money and hired a cook this would most certainly mean my rapid death.

I don't cook! (Unless it's in a box a bag or a can). I'm a consumer of food, and it's thanks to people like me that the Portland food industry is booming.

I got creative of course, buying a lot of salads and green smoothies. But eventually the dreaded realization came to me...

Anna... you'll either have to cook something... or starve...

I am many things, but a stupid woman isn't one of them. SO, I went back to my faithful google and I asked it what kind of food CAN I eat?

I discovered there was a popular diet that also eliminates all the food I am cutting out. On this diet you eat mainly veggies, meats, nuts and berries. Apparently it's called,  'Paleo'

At first I felt a little overwhelmed and defeated at the prospect of eating food only found on the perimeters of the grocery store... but then something magical happened. I decided to roast some veggies.

Guess what! They were delicious and it was SUPER EASY!

You literally just mix a bunch a veggies with olive oil and some random spices like salt and pepper and then lay them on a cookie sheet and bake them for a half hour or so.

After my veggies went well, I decided to try something else... only this time I decided to try my hand at a Paleo Meat Sauce to top some spaghetti squash.

I was pretty skeptical but I decided to give it a try, and it totally worked! Not only did it work, it was delicious!

So far I'd say this cooking thing is pretty fun. But let's not get too far ahead of ourselves... I mean... it has only been two days after all.
