There are a few things you probably don't argue about in Maine: lobster is delicious, summer should last longer, and everyone has an opinion about who makes the best lobster roll. 

But when an actual Iron Chef winner and James Beard Award winner weighs in? Okay, we're listening. 

Chef Jose Garces, who won The Next Iron Chef, recently gave some serious love to a lobster roll from Twelve in Portland, and we're talking about a lobster roll with a Maine twist that might make you rethink everything you thought you knew. 

The star of the show? A lobster roll served on a croissant. 

Yes. A CROISSANT.

Because apparently Maine lobster and buttery French pastry looked at each other and said, “You know what? This could work.” 

And according to Garces, it absolutely does. 

Garces isn't exactly a casual observer when it comes to food. He's an award-winning chef with restaurants across the country, and according to WMTW,  he recently opened a kitchen studio in Biddeford, where he's bringing chefs and food lovers together for pop-ups and culinary events. 

Would you eat your lobster roll on a croissant? 

Because I know Maine. Someone reading this is already offended.
